This is super easy to do an these are images of a couple of ours. We regrew our green onions and frisee with no problems.
How do you do it? Our preferred method is to restart the roots in a shot glass (seen below prior to replanting)! This also works with pineapple tops; soon to come...

Keep reading to see how its done.... It's so ridiculously simple, you will regret doing it for all of your previous years, just as we have.
Simply use your veggies as usual, and then place into a shallow pool of water; 1/8" or less. Too much water will lead to root rot. If you get some root rot, you have two options. First, alleviate the problem, too much water. Secondly, you can add a squirt of hydrogen peroxide to your water kill emerging rot, fungus, etc.
Hydrogen peroxide actually breaks down new organic growth, and then converts to oxygen and H2O (water.) The water is obviously good, and the oxygen is absorbed through the roots, used by the vegetable, and thus is good as well.
We empower you to take one small step to save a little $ and add your regenerated veggies to your meals. This is literally no cost and should become a practice for us all!
